Potatoes are packed with vitamin C, vitamin B6, potassium, manganese, magnesium, phosphorus, niacin, and folate with much of the nutrients concentrating in the skin of the potatoes. Potatoes are also rich in antioxidants like flavonoids, carotenoids and phenolic acids that can reduce the risk of chronic diseases like heart disease, diabetes and cancer.

Potatoes contain a special type of starch known as resistant starch. This starch is not fully absorbed by your body. Instead, it reaches the large intestine where it becomes a source of nutrients for the beneficial bacteria in your gut. You can increase the resistant starch content of potatoes by storing boiled potatoes in the fridge overnight and then consume them cold.
